This item is $7.75/LB, the estimated final price is between $5450.00 and $7350.00 and the estimated final weight is between 700 and 950 lbs. Final price determined by final weight. Price is calculated from hanging weight. This price includes the processing/cut & wrap fee.

What is hanging weight?2024-06-13T16:18:04+00:00

Hanging weight is the last weight that the butcher gets on the side of beef before they cut it up.  This weight is taken after the side of beef has been butchered, skinned and the organs have been removed.  The actual pounds that will end up in your freezer will be roughly 70% (give or take) of the hanging weight.  We do not get another weight on the beef so that is why we sell it by the hanging weight.

We do not have a cow/calf herd meaning we do not breed our own cows and then feed out the calves.  We buy the calves right after they are weaned at about 6 months old.  They are roughly 500 pounds when we buy them.  We try hard to purchase the calves from local farms that have cow/calf herds so that we know the genetics and how the calves were raised before we buy them.

In Illinois it is illegal for someone to butcher meat and then sell it.  We have been using a family owned butcher shop in Homer, IL since I started raising beef in 2008.  It is a state inspected, high quality butcher shop that does not rush the process but rather lets the sides of beef hang for a full 10 days after they are butchered to increase tenderness.  After the meat hangs for 10 days the butcher shop cuts it, packages it and flash freezes it overnight before we go and pick it up the following day.

We have our cattle butchered every January.  We keep our herd on a one year rotation.  If you pass on buying beef this January then you will have to wait a whole year.
